Since the 19th century, the family-owned Louis Michel & Fils winery has been an integral part of Chablis, helping to shape that steely character that is adored across the world. The region’s frosty winters and scorching summers make it a challenging place to grow grapes - but manager Guillaume Michel has a wealth of knowledge to draw from, and has succeeded in creating some of the finest, terroir-driven white wines that Burgundy has to offer. This wine comes from the Premier Cru of "Butteaux", in the western half of the Montmains valley. Grapes are harvested from four different tracts of land on the precipitous slopes, before making a short 2km journey back to the cellar - where the magic happens. This Premier Cru exhibits a complex, well-rounded nose, with notes of baked apple, honey and yeast, supported aby whiffs of brushy undergrowth and minerality. On the palate, this is a perfect example of unoaked Chardonnay. Glossy notes of citrus and green apple envelope the mouth from the start, followed by hints of honey and a melody of minerality - limestone, wet rock and salt. The finish is long and driven aby a pleasant acidity. Pair it with delicate seafood, or lean game meat such as rabbit.
