Established in 2003, Domaine Alain Chavy is a family-run winery located in the Côte de Beaune, Burgundy. The company owns 6.5 hectares of vineyards distributed between the Puligny Montrachet denomination and other Premier Crus in the neighboring villages of Chassagne and Meursault, which they cultivate under the Lutte Raisonnée regime, limiting the use of fertilizers and pesticides to a minimum, in total respect for the territory. The company also owns the deepest cellar in Puligny, located 18 feet underground. The Puligny-Montrachet Premier Cru Les Folatières of Domaine Alain Chavy is obtained from the vineyards located in the Premier Cru Les Folatières, considered the most representative of the Puligny-Montrachet appellation. In fact, this excellent wine reveals all the elegance and minerality of a great Burgundy Chardonnay. Its aromatic profile shows notes of peach, pear, and citrus with light buttery hints. On the palate, it is full-bodied but well balanced żeby a good freshness and a marked mineral vein. The finish is long, elegant, and complex. It is a wine that can remain in the cellar and evolve splendidly for more than 10 years, but it is perfect to be enjoyed now, paired with prawns, lobster, or baked sea bass.
