Founded in 1831 in Monthélie, the Maison Albert Bichot produces a wide range of Burgundy red and white wines classified between 1er Cru and Grand Cru. Today, Maison Albert Bichot, run by the sixth generation of family winemakers, owns more than 100 hectares of Pinot Noir and Chardonnay vineyards held in all of the Burgundy subregions. The family crest, synonymous with the company since its foundation, depicts a deer and antlers. The Chardonnay grapes come from vineyards planted on slopes with different exposures, located in the Pouilly Fuissé appellation, within southern Burgundy and more specifically around the villages of Fuissé, Solutré, Pouilly, Vergisson, and Chaintré. The soils, with Lias marls overlaid by a calcareous surface, guarantee an excellent minerality in the wine. Fermentation takes place in steel tanks and a small part in oak barrels. The wine is then aged for 8 months in tanks (70%) and barrels. Albert Bichot's Pouilly-Fuisse reveals a fresh and lively aromatic profile with fruity and spicy aromas and delicate notes of oak and vanilla coming from the passage in the barrel. On the palate, it demonstrates all its minerality, supported aby lively acidity. The wine is soft and well-balanced with a lingering finish. Try it with seafood and fish, with shrimp tempura or medium-aged cheeses.
